Clam Chowder


6 slices bacon, cut into 1"
(2.5 cm) pieces 6 slices
2 cups chopped potatoes 500 ml
1 onion, chopped 1
2 celery stalks, chopped 2
3 tbsp Lactantia Butter 45 ml
3 tbsp all purpose flour 45 ml
3 cups Beatrice 1% Milk 750 ml
dash cayenne pepper dash
1 tsp Old Bay Seasoning 5 ml
1 tsp parsley flakes 5 ml
2 cans clams, drained and rinsed 2 cans
Active Time: 30 minutes
Serves 6-8

1. In a large heavy-bottomed pot add
bacon, potatoes, onion and celery. Cook for 20 minutes
over medium-high heat until potatoes are soft. Stir
often.
2. Add butter and stir until melted. Sprinkle in flour,
Old Bay seasoning and parsley and mix well. Cook for
1 minute. Add milk.
3. Lower heat to medium and stir until mixture thickens.
Add clams and continue cooking for 5 minutes until heated
through.
