Curried Cauliflower Soup

2 tbsp Lactantia Butter 30 ml
1 cup chopped onions 250 ml
2 garlic cloves, minced 2
1 cup cubed sweet potato 250 ml
4 cups cauliflower florets 1 L
1 tbsp curry powder 15 ml
3 cups vegetable stock 750 ml
1 cup Beatrice Half and Half 250 mlActive Time: 15 minutes
Cooking Time: 15-20 minutes
Serves 6

1. In a large pot melt butter over medium-high
heat. Add onions and cook for 5 minutes, stirring occasionally.
Add garlic and cook for 1 minute. Add curry powder and
cook for 1 minute. Add sweet potato and cauliflower
and stir until well coated.
2. Add vegetable stock. Cover and simmer for 15-20 minutes
until vegetables are tender. Remove from heat.
3. Using a hand-held blender or food processor puree
soup. Return to pot.
4. Add cream, return to low heat and stirring constantly
until heated through but not boiling.
