Lemon Garlic Shrimp Alfredo


½ -3/4 cup Beatrice
Whipping Cream 125 - 185 ml
1 Lemon, zested and juiced
2 Garlic cloves, minced
½ tsp Salt 2.5 ml
¼ tsp Black pepper 1.2 ml
1 cup Frozen shrimp that has been peeled, deveined and
cooked (thaw according to package directions) 250 ml
4 cups Cooked rotini pasta 1 L
¼ cup Grated Parmesan cheese 60 mlActivity time: 20 min.
Yield: 4 servings



1. In heavy bottom
saucepot add ½ cup (125 ml) cream, lemon zest,
garlic, salt and pepper and bring to a boil over medium-high
heat. 2. Add shrimp, pasta and lemon juice and heat again until
boiling. Turn down heat to medium low and let simmer about
3-5 minutes until heated through. Add more cream if mixture
dries out and adjust salt and pepper to taste.3. Remove from heat and stir in Parmesan cheese.4. Serve garnished with extra Parmesan cheeseFor the adventurous:
1. Replace Whipping Cream with Table Cream or Half and
Half and allow longer simmering time. Sauce will not be
as thick.
2. Omit shrimp and add your favourite steamed vegetable
instead.
3. Add your favourite steamed vegetable (snow peas work
well with shrimp) with the shrimp.
