Apple and Berry Crepes
1 cup all purpose flour 250 ml
2 tbsp sugar 30 ml
3 eggs 3
1 ¼ cup Beatrice 1% Milk 310 ml
2 tbsp Lactantia Salted Butter, melted 30 mlFilling
4 apples, peeled, cored and sliced 4
1 cup berries (raspberry, blueberry, blackberry) 250 ml
2 tbsp Lactantia Butter 30 ml
4 tbsp brown sugar 60 ml
¼ tsp cinnamon 1.2 ml
¼ tsp cardamom 1.2 mlActive Time: 40 minutes
1. Crepes: In
a medium bowl add flour and sugar. Mix well. Add eggs
and ½ cup (125 ml) of milk. Beat until smooth.
Gently whisk in remaining milk. Cover and let rest until
filling is prepared.
2. Filling: In a large skillet melt butter over medium-high
heat. Add sugar and stir until dissolved. Add apples,
cinnamon and cardamom. Cook for 5 minutes, stirring occasionally.
Add berries. Mix well. Cook for 5 minutes, stirring occasionally.
Keep warm over low heat until crepes are ready.
3. To complete the crepes add 2 tbsp (30 ml) of melted
butter to batter and mix until combined. Heat a crepe
pan (6" skillet) over medium-high heat. Lightly brush
pan with butter. Pour ¼ cup (60 ml) of batter into
prepared pan and tilt to make a thin even layer. Cook
1 minute each side. Continue until batter is finished.
4. Place ½ cup (125 ml) of filling into the middle
of a crepe. Fold in edges. Continue until you run out
of filling or crepes. Serve immediately.
