Crème Brulee


1 ½ cups Beatrice
Table Cream 375 ml
3 egg yolks 3
½ cup white sugar 125 ml
1 tsp good quality vanilla extract 5 ml
½ cup brown sugar 125 mlActive Time: 10 minutes
Baking Time: 30 minutes
Serves 4



1. Preheat oven
to 350°F.
2. In a medium bowl add egg yolks, vanilla and white sugar
and mix well. Gradually mix in cream.
3. Place 4 small ramekins into a shallow dish and pour
in enough water to measure 1" (2.5 cm) deep. Divide
cream mixture into ramekins.
4. Bake for 30 minutes until set. Cool completely and
then refrigerate for at least 1 hour.
5. Sprinkle 2 tbsp (30 ml) of brown sugar evenly over
each ramekin. Place under a broiler until the sugar has
caramelized. Allow to cool slightly before serving.
