Banana Breakfast Bread3/4 cup wheat bran 175 mL
2 eggs
1 cup all-purpose flour 250 mL
3/4 cup whole wheat flour 175 mL
2 tsp baking powder 10 mL
1 tsp baking soda 5 mL
1 tsp cinnamon 5 mL
1 cup soured Beatrice PurFilter Milk or Parmalat Butter Milk 250 mL
3/4 cup brown sugar 175 mL
1/3 cup melted butter 75 mL
3 ripe bananas, mashed 3
2 tbsp orange juice 30 mL
1 tbsp grated orange peel 15 mL
1/2 cup cup raisins (optional) 125 mL
1/2 cup chopped walnuts (optional) 125 mL

1. Preheat oven to 350 F (180 C).
2. In a large bowl, stir together bran, both flours, baking powder, baking soda, salt and cinnamon; set aside.
3. In a medium bowl, beat together Beatrice PurFilter Milk or Parmalat Butter Milk, brown sugar, butter, eggs, bananas, orange juice and peel. Fold into dry ingredients just until moistened. Stir in raisins and walnuts and spoon batter into a buttered 9"x 5" (23 x 13 cm) loaf pan.
4. Bake for 55 to 60 min or until a toothpick inserted in the centre comes clean.
TIP: To sour Beatrice PurFilter Milk or Parmalat Butter Milk, combine 1 tbsp (15 mL) of white vinegar with Milk.
